Water is a resource to be conserved, to avoid water stress on the vines, and to be removed, to avoid excesses, stagnation and erosion. Good vineyard ‘design’ and use of storage systems meet these needs as part of an efficient use of water to improve production.

Climate change, water stress and thermal excesses, analysis of limiting factors; shifting viticulture northwards and to higher altitudes; adaptation to the characteristics of the growing area; choice of rootstock, plant management to strengthen its resilience (increase in live wood and therefore reserves to reduce inputs); choice of planting densities and architecture; practical examples of plant reactivity in different environments.
